If you want to save seeds to plant next year, you ll need to allow your bok choy to bolt. It s time to start sowing new bok choy in July August, a few weeks apart. You can t prevent the bok choy from bolting other than creating a good environment for your bok choy to begin with, for example by sowing the seeds early and watering them regularly.
